I had also thought that the way to do this is to peen the back side, which will be covered with leather. Years ago, I tried doing this with an Abbey lock, but I didn't have a proper jig to make it work. Another way is to peen the front side, as it is easier to make some kind of jig/holding device for the back side while peening the front.

Repeated light taps on the heel of a peening tool (one that is made with the right kind of hardened heat-treated steel) with a steel hammer will work better than using a mallet made from a softer material. This is an exception to the rule of not using a steel hammer to hit a steel tool.

Many times we think a two-minute touch-up grind is sharpening the edge when it is not. Periodically, we need to do a 10-minute grind to mate the stone properly with the knife edge. I now periodically mark only the tip of the knife edge so I can see immediately if the stone is sharpening the edge. If I see no ink removal, I know to do a longer grind.
