I would start with this blog post I created on dyeing leather:
If the product you are making doesn't have a lining (where you will see the flesh side), you may dye the flesh side too. However you will need to seal it well, as the contents of the product (bag or wallet) may get some dye rub-off. The flesh side also absorbs a lot of dye.
