Is that blade a single bevel or double bevel? You could sharpen it by making the round knife jig like I show in the video course 'Techniques Of The Blade: Advanced Sharpening'. That would give you a very consistent edge.
Then you may want to sharpen it like a skiving knife which is demonstrated in the first 'Techniques of the Blade' video I did. Easier than making up a jig.
