Some years ago I bought a set a diamond sharpening plates from DMT for woodworking since it was recommended by Paul Sellars (wonderful woodworker)Since them I have used the same plates to sharpen pretty much all my edge tools, kitchen knives and all leather tools included!
There are cheaper versions to the DMT plates, although you can be certain that you will never need to flatten the DMT plates and they will probably last about a decade of daily use each.
But pretty much any cheap/DIY "scary sharp" solution will set you up quickly and get you cutting 😁
