Quite often, I want templates (for bags, wallets) to be good to use a few times. Currently, I print out onto paper and then glue the paper to paper card. But, I find paper card not really durable with the edges getting less accurate after its first use. The templates need to be easily cut out in the first place but then suitable for more than one bag. What does anyone recommend? I’ve seen 1mm MDF, 1.5mm ABS but I don’t know what is easily cut (craft knife), doesn’t shatter etc. thanks

Those are two good options, but generally, if it can be cut out with a craft knife, it's not a long term solution. These are best cut with a band saw.
1-1.5mm cellulose fibre board is a good compromise if you go around the edge with (thin) superglue afterwards. Once soaked in and set, lightly sand the edge with fine grit abrasive paper until smooth. This makes for a fiberglass like hardness that lasts. As hard as plastic, yet can be initially cut out easily. You can do this on greyboard/bookbinders board too.
