Hi team! I received the Vergez Blanchard Angular Skiving / Paring Knife (HHS) and I would like to sharpen it so that it works 100% perfectly. What grit from diamond plates should I use ? Can I also use sandpaper ?

It works very good with the sandpaper.
I used 600/800/1000/1200/3000 grit and this is the result before strop (I don’t have yet).
I did the process 3 times because I want to exercise that skill.
I really enjoyed it but I’m not 100% happy (I think i will never be)

Is there any suggestion for when you should move from one grit to the next on this particular knife? Phil in a review said probably took about 45’ to get the edge up to something was decent enough to then start working on the strop
Just a small addition to what was said,
I would suggest 500/600, 1000 and 3000. The reason why I add the 3000 for this knife is because it will make the time you spend on the strop less.
Also, be ready to invest sometime for the process. It takes a while to get this one up to specs.
