I am interested in adding a padding (or 3D look?) to a bag to add dimension and a tailored look. I want to use lamb skin on the exterior and a pig suede on the interior. I've google searched this and found that they used a veg tan for a layer and another layer of veg tan to create an edge. My concern is that this is a lot of layers (and weight). has anyone tried this and if so, what weight/thickness did you you for all the layers of leather?

If I am not mistaken, the first layer of Vegtan would be for reinforcement, not for padding.
I personally would use a padding foam for this. RMLS has an italian one that is really great for that. It compresses to almost 0mm where it is being stitched or pressed down, and aroun 3mm where it is left to expand.
This will save on the weight tremendously like you mentioned
