Some may dissagree, but I don't think it's goint to make a lot of difference on a wallet. It's more important to get a good cut from an area away from the flank/belly/neck etc and avoiding any scars.
On an item that has a direction of stress, such as a solid leather belt or a non-reinforced bag, then yes, grain direction becomes important.
