Well, the conceit is that the vast majority of the production is still machine stitched, and only the finishing is done by hand - you're seeing quick bits of the handle and side gussets being stitched by hand. That's about it. Pockets, zipper, straps, edge stitching, lock/key keeper and cloche - all machine. Production would take far too long and and be too costly. You can't approximate the angle of the saddle stitch with a machine needle because the tension in the twist of the thread works in opposition and effectively flattens it out. You can, however, get a sharp reverse angle with a machine needle, which works with the twist of the thread.
